They’re never too dry, but they’re crisp on the outside and soft and chewy in the middle. And for all you gluten-free readers, they’re the easiest gluten-free cookie recipe I know. Here’s what’s in them:

- If you don’t have coconut sugar on hand, use whatever granulated sugar you do have. White sugar, brown sugar, or a mix of both will work here.
